Sweet Potato Cake by Inna
Sweet potato cake? Yes, you can - and it tastes fantastic!
Ingredients:
- 400g cooked sweet potato
- 70g instant oats
- 50g vanilla whey
- 60g date paste (easy to make yourself, soak dates in warm water and puree)
- 30g dark chocolate, finely chopped (1/3 for sprinkling).
- Frankys Wheynut Butter Shortbread
Preparation:
Mash the sweet potato with a fork, mix with the remaining ingredients and sprinkle with chocolate shavings.
Spread evenly on a baking tray lined with baking paper and bake at 170°C fan oven for approx. 20-30 minutes. Top the warm cake with peanut butter and enjoy!
