Recipe of the day sweet potato protein cookies

Ingredients
- 1 whole sweet potato
- ¾ cup unsweetened apple porridge
- ¼ cup low-fat quark
- ¾ cup brown sugar
- 4 large egg whites
- 2 cups oat flour
- 2 scoops protein powder
- 2 ½ teaspoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- ½ teaspoon salt
- ½ teaspoon nutmeg
- ¼ teaspoon ground ginger
- ¼ teaspoon allspice/clove pepper
- 1/3 cup stevia powder
Preparation
- Preheat the oven to 180 degrees and spray a baking tray with cooking spray.
- Poke holes in the sweet potato and heat in the microwave for 6 to 8 minutes.
- Remove the skin and leave the sweet potato to cool.
- Combine apple puree, low-fat quark, stevia, brown sugar and egg white in a medium bowl.
- In a large bowl, combine oat flour, protein powder, baking soda, baking powder, salt and spices.
- Stir the mashed sweet potato into the wet ingredients until there are no lumps.
- Mix the wet ingredients with the dry ingredients to form a uniform dough.
- Use a tablespoon to form cookies on the baking tray 2 centimeters apart.
- Bake the cookies for 10 to 12 minutes.
