Ingredients

  • 2 whole sweet potatoes
  • 2 tablespoons brown sugar
  • ½ teaspoon cinnamon
  • 2 salmon fillets
  • 1 tablespoon butter
  • 5/8 cup spinach
  • 1 tablespoon olive oil
  • ½ cup chopped pecan nuts

Preparation:

  1. Peel the sweet potatoes and cut them into large chunks. Place them in a saucepan, cover with water and boil for 15 to 20 minutes until soft.
  2. Remove the sweet potatoes from the heat, drain the water and add the cinnamon and sugar. Process the potatoes with a blender to make a fluffy mash.
  3. While the potatoes are cooking, place the salmon, skin side down, on the grill or in a large frying pan and add half the butter to each piece. Grill or broil the salmon without turning until cooked through, about 10 to 15 minutes.
  4. Just before the salmon is cooked, heat the oil in a large frying pan over a high heat. Add the spinach, cover the pan and cook for about 2 minutes, shaking the pan occasionally.
  5. Place half of the sweet potato puree on each plate and top with the spinach. Slide a spatula between the fish and the skin and separate the fish from the skin. Place the fish on top of the spinach.
  6. Sprinkle the fish with the chopped pecan nuts and serve.
