Ingredients:

  • ¾ cup low-fat milk
  • ¼ cup pumpkin puree
  • ½ cup rolled oats
  • ½ cup vanilla-flavored whey protein powder
  • 2 egg whites
  • 1 tablespoon pumpkin pie spice
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • Liquid stevia for sweetening

Preparation:

  1. Mix all the ingredients in a blender or with a food processor until the batter is smooth and creamy.
  2. Pour the batter into a greased pan or onto a waffle iron. Fry the pancakes for 2 to 3 minutes per side until golden brown.
  3. Serve the pancakes with maple syrup or fresh berries.
