Recipe of the day pumpkin protein pancakes

Ingredients:
- ¾ cup low-fat milk
- ¼ cup pumpkin puree
- ½ cup rolled oats
- ½ cup vanilla-flavored whey protein powder
- 2 egg whites
- 1 tablespoon pumpkin pie spice
- ½ teaspoon salt
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- Liquid stevia for sweetening
Preparation:
- Mix all the ingredients in a blender or with a food processor until the batter is smooth and creamy.
- Pour the batter into a greased pan or onto a waffle iron. Fry the pancakes for 2 to 3 minutes per side until golden brown.
- Serve the pancakes with maple syrup or fresh berries.
