This quick potato and egg dish fits perfectly into any Paleo diet plan

Ingredients:

  • 2 whole eggs
  • ½ slivered sweet potato
  • ¼ teaspoon of onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • Salt and pepper to taste

Preparation:

  1. Spray a frying pan with coconut oil spray and heat over a medium heat.
  2. Add the sliced sweet potato to the pan and cook for 1 minute.
  3. Add the spices and cook the mixture for another minute
  4. Add the eggs and cover the pan as soon as the sweet potato pieces start to turn golden around the edges.
  5. Cook the eggs for 3 minutes.
