Recipe of the day Coffee pecan protein bread

Ingredients:
- ½ cup chopped almonds
- 2 tablespoons natural almond butter
- 1 whole egg
- ¼ cup vanilla flavored whey protein powder
- 2 tablespoons stevia powder
- 2 tablespoons freshly brewed espresso
- 1 tablespoon unsweetened apple puree
- 3 tablespoons chopped pecans
Preparation:
- Blend all ingredients except the pecans in a food processor. Add the pecans after blending to maintain their crunchy texture.
- Bake the mixture in the oven at 160 degrees for 10 to 15 minutes. Be careful not to exceed 15 minutes. Check the bread after 8 minutes - this is especially true if you are using muffin tins instead of a baking pan. As soon as a knife inserted into the bread comes out clean, the bread is ready.
Enjoy the bread with peanut butter or jam.
Note: You can also use brown rice syrup instead of stevia.
